CHRISTMAS RECAP

There are only a few of us here at work today; everyone else is still on vacation. I have a stack of Christmas cards sitting on my desk that I’m going to address on my lunch break and drop off at a mailbox this afternoon. #37 on my 101 Things list is “Send at least 10 Christmas cards and write a personal note in each,” so I figured sending late Christmas cards is better than sending no Christmas cards.

My secret to eating a little bit less at the holiday dinner table? Eat lots of veggies from the veggie tray while you’re waiting for the rest of the food to be ready.

Mom made her famous Graham Cracker Balls this weekend. I came in mid-preparation that day, so I didn’t help her put them together — but I did eat the extra chocolate that had dripped on the wax paper, and I ate a few before I left.

Speaking of Christmas candy — Peppermint Bark is to die for. I’ve never thought about making it myself, but I looked online today and the recipe actually looks pretty easy. Maybe I’ll try it next year.

A surprisingly good dish: Elissa made Salmon and Potato Casserole for Christmas Eve dinner. She’s always trying something new — I aspire to be like her.

I’ve been coughing since last Thursday — it was so bad over the weekend that my voice was scratchy and hoarse. Mom gave me cough drops, a new bottle of cough syrup, and a nasal spray for my runny nose. I’m almost done with the cough syrup, so hopefully it’ll clear up soon.

  2. Peppermint bark looks similar to the chocolate covered pretzels I do (but obviously sans-pretzels). Looks easier though… just melt and pour. Interesting!

    I’m with Michelle. I’m all about the Christmas sweets. It’s the only time of year (well Christmas and Thanksgiving) where sweets are so plentiful. Um ok, and Valentine’s, Easter, and Halloween… but I live for those peaks!

  4. Love veggie trays!! And cookies!! I’ll be glad to see the cookies go though…they aren’t worth buying bigger pants!

  6. Peppermint bark is great, isn’t it? It’s 99% easy to make too. That 1% that’s hard is breaking up the candy canes. I tried it that way this year (usually we order crunchy mint pieces from a candy store), and I spent probably a good hour hammering away on those candy canes, and I still couldn’t get the pieces small enough. Maybe it’s easier if you don’t have to worry about bothering your apartment neighbors with the noise? Or maybe it would be easier for you, since you go to the gym :) Me? I’ll be ordering the crunchy mint pieces next time!
