Tuna-Salad Stuffed Pepper

For my fourth submission to the Whip It Up challenge, I made a tuna-salad stuffed pepper. I got the idea from a recipe in my recipe binder (I’m not sure where it came from originally), but I changed it up — so I guess this version is all mine, in a not-very-difficult kind of way.

I like tuna salad, and I don’t add mayonnaise to the mixture so it’s also healthy. The crisp green pepper, and the onions and celery in the tuna salad, make a nice contrast to the tuna, mushrooms, and chickpeas. It was very good and I would definitely make it again.

Tuna-Salad Stuffed Pepper

(After I took this photo, I cut the green pepper in half with a knife and then into more manageable bite-size pieces. It was easier to eat that way.)

Tuna-Salad Stuffed Pepper

1 6-oz. can tuna fish, packed in water

1/2 cup chickpeas (garbanzo beans)

Small handful of chopped mushrooms

Chopped onion and celery

1 tsp. soy sauce

1 medium pepper (I used green, but red or orange would be good as well)

Optional ingredients: 1/4 cup brown rice, chopped water chestnuts, fresh grated ginger, 1 tsp. rice vinegar, 1/2 tsp. sesame oil

Serves 1

  1. I love love love stuffed peppers. And tuna. And chickpeas. THANK YOU for not adding mayo! Can’t stand that stuff.

  5. Yeah, my bf and I detest mayonaise. It’s so great that I don’t even have to see it in the refrigerator. I don’t know why eggs and oil mixed together turn into that evil white stuff.

    I do love white tuna, with lots of chopped onion and celery and a splash oil and vinegar if it’s too dry.

    I like the idea of pairing tuna with green pepper. That sounds really fresh and satisfying. thanks for sharing!

  7. That looks tasty. I remember when my mom used to make stuff peppers but it was with the hamburger and the corn. Not as healthy as this one. I may have to try this one. Thanks

  8. That looks like a great recipe. I’m always looking for tuna ideas since I’m not a mayo person at all. I think I’ll go with red pepper though–sweeter and more vitamin C.
